The Pont du Gard artisanal olive oil mill, Soulas, is named after the family who have owned and run it since 1930. It is perched on the hillside in the small village of Collorgues, 10km from Uzès.

At the mill, the ancient grindstones have been replaced by machines (to remove leaves, wash and grind the olives, decant the oil, etc.) but the principles of authenticity based on ancient savoir-faire still remain.

A range of natural products that are the fruit of an expertise spanning three generations.

For a touch of perfection, visitors arrive in a decor of olive trees. Here the speciality is the Picholine du Gard, also known as Colliasse. This intensely fruity olive variety comes from the Uzège area where it has been cultivated by traditional methods for several decades. Thus, the extra-virgin olive oil that we at Moulin Soulas suggest you try, is made partly from Picholine olives, but also contains other varieties such as Arbequine Ascolana, Rougette and Noirette.

In technical terms, Jean and his daughter, Belen, have always opted for cold-pressed extraction from olives that are turning colour, which indicates that they have reached a certain level of ripeness.
